Keeping it simple

Our simple aim at New Street Butchers is to “Do what we do and do it well!”.  Run by Rob Ayling, our family butchers provides quality, local, free range meat and seasonal fruit and vegetables — as well as superb customer service. Our business has recently expanded to open a deli.

Keeping it in the family, Rob’s wife Martine runs the deli, which is well-stocked with mouthwatering food and drinks. Much is homemade, but some is sourced from excellent local suppliers. The deli kitchen is in full view and fills the air with the smell of freshly baked pies, pastries, and cakes.

Our people

While the food is our headline act, it’s ably supported by the people who make your visit to our shop such a pleasure.

On the butchers’ team, Rob, Gerry, Richard and Ryan will always greet you with a smile and give you any advice you need on meat selection, quantities and cooking times. Rob’s team are well-known for their friendly banter, as well as their great service and butchering skill.

On the deli side, your eyes and nose will probably lead you to what you fancy, but if you need any help, you’ve got it from Martine and her team, which includes Sarah, Anna and Jenny. They are passionate about food and they are a font of knowledge on everything in stock.

Our story

Before New Street Butchers, another butchers shop resided at 99 New Street, run by Dave Unsted.

Rob Ayling joined Dave’s team as a Saturday boy at the age of 16. He showed a lot of promise and was quick to learn the skills required to be a great butcher: an eye for selecting the finest meat available, skill to produce the very best cuts, and the gift of the gab that made him a favourite with the customers.

It’s no surprise that Rob had a natural flair for the business, as his father Chris Ayling started out on a lifelong career as a butcher in 1963.

In 2000, Rob and his father joined forces. They bought Dave Unsted’s business and opened under the name ‘New Street Butchers’, with a shared vision to run a family butchers with strong values, unrivalled service and top quality produce.

It was a winning formula — and the father and son team quickly established a wide clientele throughout Horsham and the neighbouring towns.

When Chris retired in 2012, Rob took over the business. To customers, he is the friendly face of a brilliant local family butchers. To peers in the industry, he is an award-winning butcher, highly regarded in Sussex and surrounding counties as one of the best in the South East of England.

Along with wife Martine, Rob continues to grow this thriving local business. When the opportunity to take on the shop next door arose, they grasped it, opening a deli in 2013, offering yet more tempting foodie delights to their customers.
